Ingredients
Cranberry and Apple Glaze:
- ½ cup cranberries
- 1 small apple peeled and chopped
- ½ cup water or apple juice
- ¼ cup sugar adjust to taste
- A pinch of salt
For the Fillet:
- Store-bought pork fillet with an apple and pecorino filling
- Rosemary
Instructions
Cranberry and Apple Glaze:
- In a small saucepan, combine the cranberries, apple, and water or apple juice. Cook over medium heat until the fruit is soft (about 10-15 minutes).
- Add the sugar and a pinch of salt, and continue cooking until the mixture thickens. Use a blender or hand blender to smooth the mixture once it has reduced.
- Set the glaze aside until needed.
For the Fillet:
- Preheat your oven to 180°C and prepare a pan.
- Add the pork fillet to your pan and top with rosemary for extra flavor.
- Cook the pork fillet according to the package instructions. After 25 minutes, turn the fillet and add the glaze.
- Serve with roasted potatoes, honey glazed carrots and roasted green beans.
