Pork Tenderloin with Apple and Pecorino Stuffing and a Cranberry and Apple Glaze

Cranberry and Apple Glaze:
- ½ cup cranberries
- 1 small apple peeled and chopped
- ½ cup water or apple juice
- ¼ cup sugar adjust to taste
- A pinch of salt
For the Fillet:
- Store-bought pork fillet with an apple and pecorino filling
- Rosemary
Cranberry and Apple Glaze:
In a small saucepan, combine the cranberries, apple, and water or apple juice. Cook over medium heat until the fruit is soft (about 10-15 minutes).
Add the sugar and a pinch of salt, and continue cooking until the mixture thickens. Use a blender or hand blender to smooth the mixture once it has reduced.
Set the glaze aside until needed.
For the Fillet:
Preheat your oven to 180°C and prepare a pan.
Add the pork fillet to your pan and top with rosemary for extra flavor.
Cook the pork fillet according to the package instructions. After 25 minutes, turn the fillet and add the glaze.
Serve with roasted potatoes, honey glazed carrots and roasted green beans.
