This vibrant salad combines the earthy sweetness of roasted beets with the tartness of red cherries, all brought together with creamy feta and a drizzle of balsamic vinegar.
Ingredients
- 2-4 medium beets peeled and cut into 1/4-inch half moons
- 1 Tbsp olive oil
- 1/4 tsp salt and black pepper
- Greens of choice
- 1 cup red cherries pitted and halved
- 1/4 cup crumbled feta
- Balsamic vinegar
Instructions
- Steam the beetroot until soft.
- Add to a pan along with Balsamic vinegar, salt and pepper, and dried rosemary
- Roast in the pan (or roast an oven)
- In your plate of choice add the greens, roasted beets, cherries and crumbed feta
- Serve and enjoy!
