Beetroot and cherry salad
This vibrant salad combines the earthy sweetness of roasted beets with the tartness of red cherries, all brought together with creamy feta and a drizzle of balsamic vinegar.

Ingredients

medium beets
peeled and cut into 1/4-inch half moons

Tbsp
olive oil
1/4
tsp
salt and black pepper
Greens of choice
1
cup
red cherries
pitted and halved
1/4
cup
crumbled feta
Balsamic vinegar
Instructions
Steam the beetroot until soft.
Add to a pan along with Balsamic vinegar, salt and pepper, and dried rosemary
Roast in the pan (or roast an oven)
In your plate of choice add the greens, roasted beets, cherries and crumbed feta
Serve and enjoy!
