Beetroot and cherry salad

This vibrant salad combines the earthy sweetness of roasted beets with the tartness of red cherries, all brought together with creamy feta and a drizzle of balsamic vinegar.
Course Salad

Ingredients
  

  • 2-4 medium beets peeled and cut into 1/4-inch half moons
  • 1 Tbsp olive oil
  • 1/4 tsp salt and black pepper
  • Greens of choice
  • 1 cup red cherries pitted and halved
  • 1/4 cup crumbled feta
  • Balsamic vinegar

Instructions
 

  • Steam the beetroot until soft.
  • Add to a pan along with Balsamic vinegar, salt and pepper, and dried rosemary
  • Roast in the pan (or roast an oven)
  • In your plate of choice add the greens, roasted beets, cherries and crumbed feta
  • Serve and enjoy!
