Indulge in a South African twist on an Italian classic! This Rooibos Tiramisu is a creamy, dreamy dessert that combines the earthy flavors of rooibos tea with the richness of mascarpone and delicate layers of ladyfingers. Perfect for any occasion, this no-bake treat is sure to impress!
- 1 ½ cups heavy whipping cream
- 2 containers mascarpone cheese room temperature
- ⅓ cup granulated sugar
- 2 cups cold rooibos tea
- 2 packages Lady Fingers
- Fine rooibos for dusting the top
- 1 tsp rooibos (to mix with mascarpone)
Add whipping cream to a mixing bowl and beat on medium speed with electric mixers (or use a stand mixer). Slowly add sugar and rooibos and continue to beat until stiff peaks. Add mascarpone cheese and fold in until combined. Set aside.
Add tea to a shallow bowl. Dip the lady fingers in the tea (Don't soak them--just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of a trifle bowl
Smooth part of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Continue until you end with mascarpone
Dust rooibos powder generously over the top. Refrigerate for at least 3-4 hours or up to overnight before serving.
