Instructions
In a bowl, whisk together the rooibos tea, honey, soy sauce, garlic, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they’re well coated. Marinate for at least 1 hour (or overnight for even better flavor).
Preheat your oven to 180°C. Place the chicken in an ovenproof dish, spooning any extra marinade over the top. Bake for 35-40 minutes until the chicken is golden and cooked through.
For extra crispy skin, switch to broil for the last 5 minutes.
