
Rooibos and Honey Chicken Thighs
Ingredients
- 4 chicken thighs or drumsticks
- ½ cup strong rooibos tea steep 1 tea bag in ½ cup warm water for 10 minutes
- 1 tablespoon honey
- ½ tablespoon soy sauce
- 1 garlic clove finely pressed
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ tablespoon olive oil
Instructions
- In a bowl, whisk together the rooibos tea, honey, soy sauce, garlic, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they’re well coated. Marinate for at least 1 hour (or overnight for even better flavor).
- Preheat your oven to 180°C. Place the chicken in an ovenproof dish, spooning any extra marinade over the top. Bake for 35-40 minutes until the chicken is golden and cooked through.
- For extra crispy skin, switch to broil for the last 5 minutes.
- Serve with your favorite side dish
