Rooibos and Honey Chicken Thighs

Ingredients
  

  • 4 chicken thighs or drumsticks
  • ½ cup strong rooibos tea steep 1 tea bag in ½ cup warm water for 10 minutes
  • 1 tablespoon honey
  • ½ tablespoon soy sauce
  • 1 garlic clove finely pressed
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ tablespoon olive oil

Instructions
 

  • In a bowl, whisk together the rooibos tea, honey, soy sauce, garlic, cumin, paprika, salt, and pepper. Add the chicken thighs, ensuring they’re well coated. Marinate for at least 1 hour (or overnight for even better flavor).
  • Preheat your oven to 180°C. Place the chicken in an ovenproof dish, spooning any extra marinade over the top. Bake for 35-40 minutes until the chicken is golden and cooked through.
  • For extra crispy skin, switch to broil for the last 5 minutes.
  • Serve with your favorite side dish
