Mix flour and a pinch of salt in a bowl.
Add the egg and mix until a stiff dough forms. If it’s too dry, add a little water, 1 tsp at a time.
Knead the dough for 5–7 minutes until smooth. Cover and let it rest for 20–30 minutes.
Roll the dough into a thick disc, then cut into rough strips using scissors directly into boiling, salted water.
Cook noodles for 2–3 minutes until they float and are tender but still chewy. Drain and set aside.
