Ingredients
  

For the lime praws:

  • 500 g prawns peeled & deveined, tails on optional
  • 2 tbsp olive oil or butter
  • Zest + juice of 1 lime
  • 2 garlic cloves minced
  • 1 tsp honey or brown sugar optional, for balance
  • Salt & pepper to taste
  • Optional: ½ tsp chilli flakes or chopped fresh chilli
  • Fresh coriander or parsley for garnish

Soy-Garlic Lime Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 garlic clove minced
  • ½ tsp grated ginger
  • Optional: 1 tsp chilli oil or a pinch of chilli flakes
  • Optional: 1 tbsp water or noodle cooking water to loosen

For the scissor cut noodles:

  • 100 g Flour
  • 1 large egg
  • Pinch of salt
  • 1–2 tsp tsp water, if dough is too dry

Instructions
 

Make the Noodle Dough:

  • Mix flour and a pinch of salt in a bowl.
  • Add the egg and mix until a stiff dough forms. If it’s too dry, add a little water, 1 tsp at a time.
  • Knead the dough for 5–7 minutes until smooth. Cover and let it rest for 20–30 minutes.
  • Roll the dough into a thick disc, then cut into rough strips using scissors directly into boiling, salted water.
  • Cook noodles for 2–3 minutes until they float and are tender but still chewy. Drain and set aside.

Cook the Prawns:

  • In a bowl, toss prawns with lime zest and juice, garlic, salt, pepper, honey (if using), and chilli.
  • Heat oil or butter in a pan over medium-high heat.
  • Cook prawns for 2 minutes per side until pink, curled, and just cooked through. Remove from heat.

Make the Sauce:

  • In a small saucepan, combine all sauce ingredients.
  • Simmer gently for 1–2 minutes to thicken slightly. Loosen with a splash of noodle water if needed.

Assemble:

  • Toss the cooked noodles in the soy-garlic lime sauce.
  • Top with prawns, a sprinkle of fresh herbs, and an extra squeeze of lime if you like.
  • Serve hot and enjoy!

  • Add stir-fried veg (e.g. bok choy, sugar snaps, or mushrooms)
  • Toasted sesame seeds for crunch
  • Swap prawns for tofu or chicken if needed
