Coconut marshmallows
Fluffy homemade coconut marshmallows. Soft, sweet, and tropical treats made with simple ingredients. Perfect for gifting, parties, or indulgent snacking
- 2 tbsp gelatin
- ½ cup cold water
- 420 g caster sugar
- ½ cup boiling water
- 2 tsp coconut extract
- Icing sugar for rolling
Line your chosen pan with cling wrap (a brownie pan works well for thick marshmallows).
Bloom the gelatin in cold water. Gently heat in the microwave until fully dissolved.
In a stand mixer, combine the dissolved gelatin, caster sugar, and boiling water. Beat until the mixture thickens and becomes fluffy.
Add the coconut extract and mix well.
Pour into the prepared pan and refrigerate until set.
Cut into squares and roll each piece in icing sugar.
