
Coconut marshmallows
Fluffy homemade coconut marshmallows. Soft, sweet, and tropical treats made with simple ingredients. Perfect for gifting, parties, or indulgent snacking
Ingredients
- 2 tbsp gelatin
- ½ cup cold water
- 420 g caster sugar
- ½ cup boiling water
- 2 tsp coconut extract
- Icing sugar for rolling
Instructions
- Line your chosen pan with cling wrap (a brownie pan works well for thick marshmallows).
- Bloom the gelatin in cold water. Gently heat in the microwave until fully dissolved.
- In a stand mixer, combine the dissolved gelatin, caster sugar, and boiling water. Beat until the mixture thickens and becomes fluffy.
- Add the coconut extract and mix well.
- Pour into the prepared pan and refrigerate until set.
- Cut into squares and roll each piece in icing sugar.
