Coconut marshmallows

Ingredients
  

  • 2 tbsp gelatin
  • ½ cup cold water
  • 420 g caster sugar
  • ½ cup boiling water
  • 2 tsp coconut extract
  • Icing sugar for rolling

Instructions
 

  • Line your chosen pan with cling wrap (a brownie pan works well for thick marshmallows).
  • Bloom the gelatin in cold water. Gently heat in the microwave until fully dissolved.
  • In a stand mixer, combine the dissolved gelatin, caster sugar, and boiling water. Beat until the mixture thickens and becomes fluffy.
  • Add the coconut extract and mix well.
  • Pour into the prepared pan and refrigerate until set.
  • Cut into squares and roll each piece in icing sugar.
