Biltong soup
This creamy South African biltong soup is packed with bold flavour. Infused with warm spices and smoky biltong powder, then finished with cream and crispy toppings — it’s a local favourite that turns every spoonful into a comfort-filled experience.

- 125 g butter or margarine
- 110 g cake flour
- 500 ml milk
- 2 ml ground nutmeg
- 2 ml cayenne pepper
- 2 ml ground coriander
- 100 ml fresh cream
- 100 g biltong powder
- 1 l beef stock
- Salt and ground black pepper to taste
- Extra biltong/croutons/mushrooms for garnishing
Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for about 1 minutes. Add milk and cook over medium heat, whisking constantly, until sauce is smooth and has thickened slightly.
Add stock, spices and seasoning. Simmer for about 10 minutes, whisking constantly, until thick.
Add cream and biltong and heat through. Remove from heat.
Garnish with biltong/croutons/mushrooms and serve with a slice of toast
