Biltong soup

This creamy South African biltong soup is packed with bold flavour. Infused with warm spices and smoky biltong powder, then finished with cream and crispy toppings — it’s a local favourite that turns every spoonful into a comfort-filled experience.

Ingredients
  

  • 125 g butter or margarine
  • 110 g cake flour
  • 500 ml milk
  • 2 ml ground nutmeg
  • 2 ml cayenne pepper
  • 2 ml ground coriander
  • 100 ml fresh cream
  • 100 g biltong powder
  • 1 l beef stock
  • Salt and ground black pepper to taste
  • Extra biltong/croutons/mushrooms for garnishing

Instructions
 

  • Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for about 1 minutes. Add milk and cook over medium heat, whisking constantly, until sauce is smooth and has thickened slightly.
  • Add stock, spices and seasoning. Simmer for about 10 minutes, whisking constantly, until thick.
  • Add cream and biltong and heat through. Remove from heat.
  • Garnish with biltong/croutons/mushrooms and serve with a slice of toast
