
Biltong soup
This creamy South African biltong soup is packed with bold flavour. Infused with warm spices and smoky biltong powder, then finished with cream and crispy toppings — it’s a local favourite that turns every spoonful into a comfort-filled experience.
Ingredients
- 125 g butter or margarine
- 110 g cake flour
- 500 ml milk
- 2 ml ground nutmeg
- 2 ml cayenne pepper
- 2 ml ground coriander
- 100 ml fresh cream
- 100 g biltong powder
- 1 l beef stock
- Salt and ground black pepper to taste
- Extra biltong/croutons/mushrooms for garnishing
Instructions
- Melt butter in a medium, heavy-based saucepan. Add flour and stir over low heat for about 1 minutes. Add milk and cook over medium heat, whisking constantly, until sauce is smooth and has thickened slightly.
- Add stock, spices and seasoning. Simmer for about 10 minutes, whisking constantly, until thick.
- Add cream and biltong and heat through. Remove from heat.
- Garnish with biltong/croutons/mushrooms and serve with a slice of toast
