Baked egg buns with pesto
These baked egg buns are a fuss-free breakfast or brunch idea that feel special but take just minutes to prep. With soft eggs, melty mozzarella, and a hit of herby pesto, they’re the kind of meal that brings comfort without the effort. Perfect for lazy mornings or quick lunches!
- 4 Burger Buns
- 4 eggs
- 2 tablespoons pesto sauce
- 4 tablespoons mozzarella cheese
- Salt and pepper to taste
Preheat the oven to 180°C. Line a baking sheet with baking paper.
Set the buns on the prepared baking sheet.
Using a sharp knife, cut a small hole into the top of each hamburger bun, being careful not to cut all the way through to the bottom.
Crack one egg into each of the holes you created in the buns. Spoon about half a tablespoon of pesto sauce onto each egg. Sprinkle about 1 tablespoon shredded mozzarella cheese over the pesto. Season with salt and pepper, if desired.
Bake for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
Remove from the oven and serve immediately.
