Baked egg buns with pesto

Ingredients
  

  • 4 Burger Buns
  • 4 eggs
  • 2 tablespoons pesto sauce
  • 4 tablespoons mozzarella cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 180°C. Line a baking sheet with baking paper.
  • Set the buns on the prepared baking sheet.
  • Using a sharp knife, cut a small hole into the top of each hamburger bun, being careful not to cut all the way through to the bottom.
  • Crack one egg into each of the holes you created in the buns. Spoon about half a tablespoon of pesto sauce onto each egg. Sprinkle about 1 tablespoon shredded mozzarella cheese over the pesto. Season with salt and pepper, if desired.
  • Bake for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
  • Remove from the oven and serve immediately.
