
Hertzoggie cookies
These delightful coconut thumbprint cookies are a perfect treat for any occasion
Ingredients
- 2 cups desiccated coconut plus extra for rolling
- 3 eggs
- 3 teaspoons baking powder
- 1 cup sugar
- 2 tablespoons butter room temperature
- 2 cups flour
- Pinch of salt
- Cherry and strawberry jam (any red jam
Instructions
- Preheat the oven to 180˚C.
- Mix sugar and butter until creamy.
- Separate eggs and beat the egg whites until stiff. Add the egg yolks to the butter mixture.
- Mix in the beaten egg whites.
- Fold in the flour, coconut, salt, and baking powder into the butter mixture.
- Scoop tablespoon-sized portions and roll them into balls. Roll in extra coconut and place on your baking pan.
- Press hearts with your thumb/finger.
- Fill the spaces with jam and bake for 15 minutes at 180˚C.
- If some of the jam cooked away fill up with more jam after taking them out of the oven
- Let them cool and store in an airtight container
