
Coconut and Blueberry Granola
I do love making my own granola and this Coconut and Blueberry Granola is at the top of my list! Perfect for breakfast or a healthy snack, it's packed with flavor and crunch. The macadamia nut butter makes it even more delicious
Ingredients
- ½ cup macadamia butter
- ½ cup honey
- Pinch of salt
- 3 cups rolled oats
- ¼ cup macadamias chopped
- 1 packet freeze dried coconut
- 1 packet freeze dried berries
- ¼ cup mixed seeds
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 160°C and line a standard-size baking sheet with parchment paper.
- Combine the macadamia butter, honey, salt, cinnamon, rolled oats, mixed seeds and macadamias. Mix well until all ingredients are evenly coated.
- Transfer the mixture to the prepared baking sheet, spreading it into an even layer. Use additional baking sheets as needed if increasing the batch size.
- Bake for 20-25 minutes, keeping a close eye on it toward the end to prevent burning. The granola is done when it is fragrant and darkened in color.
- Note: For chunkier granola, do not toss while baking. For a more crumbly texture, stir the granola at the halfway point.
- Once browned, remove from the oven and toss gently to let the heat escape. Cool completely on the baking sheet.
- Mix in the freeze dried coconut and berries.
- Serve with your choice of yogurt or milk, or enjoy it on its own as a tasty snack.
