Ingredients
- For the meatballs:
- 500 g beef mince
- 2 tbsp oats or breadcrumbs
- 2 large eggs
- ½ cup dried cranberries roughly chopped
- 80 g brie cubed
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tbsp olive oil for frying
- 40 green pepper chopped
Instructions
- Preheat oven to 200°C and line a baking tray with parchment paper.
- In a large bowl, mix together the mince, oats, eggs, cranberries, brie cubes, green pepper, salt, pepper, and garlic powder until just combined. Avoid overmixing.
- Shape into medium-sized meatballs and arrange on the tray.
- Drizzle lightly with olive oil and bake for 20–25 minutes until golden brown and cooked through.
- Serve the meatballs over spaghetti, and top with extra cubes of brie, cranberries, and fresh basil.
