Ingredients
  

  • For the meatballs:
  • 500 g beef mince
  • 2 tbsp oats or breadcrumbs
  • 2 large eggs
  • ½ cup dried cranberries roughly chopped
  • 80 g brie cubed
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil for frying
  • 40 green pepper chopped

Instructions
 

  • Preheat oven to 200°C and line a baking tray with parchment paper.
  • In a large bowl, mix together the mince, oats, eggs, cranberries, brie cubes, green pepper, salt, pepper, and garlic powder until just combined. Avoid overmixing.
  • Shape into medium-sized meatballs and arrange on the tray.
  • Drizzle lightly with olive oil and bake for 20–25 minutes until golden brown and cooked through.
  • Serve the meatballs over spaghetti, and top with extra cubes of brie, cranberries, and fresh basil.
