
Lime Prawns with Soy-Garlic Sauce & Easy Scissor-Cut Noodles

Ingredients
For the lime praws:
- 500 g prawns peeled & deveined, tails on optional
- 2 tbsp olive oil or butter
- Zest + juice of 1 lime
- 2 garlic cloves minced
- 1 tsp honey or brown sugar optional, for balance
- Salt & pepper to taste
- Optional: ½ tsp chilli flakes or chopped fresh chilli
- Fresh coriander or parsley for garnish
Soy-Garlic Lime Sauce:
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey or brown sugar
- 1 tsp sesame oil
- 1 garlic clove minced
- ½ tsp grated ginger
- Optional: 1 tsp chilli oil or a pinch of chilli flakes
- Optional: 1 tbsp water or noodle cooking water to loosen
For the scissor cut noodles:
- 100 g Flour
- 1 large egg
- Pinch of salt
- 1–2 tsp tsp water, if dough is too dry
Instructions
Make the Noodle Dough:
- Mix flour and a pinch of salt in a bowl.
- Add the egg and mix until a stiff dough forms. If it’s too dry, add a little water, 1 tsp at a time.
- Knead the dough for 5–7 minutes until smooth. Cover and let it rest for 20–30 minutes.
- Roll the dough into a thick disc, then cut into rough strips using scissors directly into boiling, salted water.
- Cook noodles for 2–3 minutes until they float and are tender but still chewy. Drain and set aside.
Cook the Prawns:
- In a bowl, toss prawns with lime zest and juice, garlic, salt, pepper, honey (if using), and chilli.
- Heat oil or butter in a pan over medium-high heat.
- Cook prawns for 2 minutes per side until pink, curled, and just cooked through. Remove from heat.
Make the Sauce:
- In a small saucepan, combine all sauce ingredients.
- Simmer gently for 1–2 minutes to thicken slightly. Loosen with a splash of noodle water if needed.
Assemble:
- Toss the cooked noodles in the soy-garlic lime sauce.
- Top with prawns, a sprinkle of fresh herbs, and an extra squeeze of lime if you like.
- Serve hot and enjoy!
