Breakfast crinkle cake

  • 500 g phyllo dough
  • 100 g butter melted
  • 1 cup milk
  • 4 eggs
  • ½ cup cheddar cheese
  • 8 rashers bacon or any meat of your choice
  • Salt and pepper

Instructions
 

  • Remove your phyllo dough from the fridge to bring it to room temperature in its packaging.
  • Preheat your oven to 180˚C. Prepare a baking dish of your choice
  • Mix the eggs, milk and salt in a mixing bowl and whisk until well combined. Set aside.
  • Lay two sheets of phyllo dough on your work surface, one on top of the other, with the short sides of the phyllo dough facing you. Fold the dough with your fingers into a concertina design. Transfer the folded filo dough to your baking dish. Repeat with the remaining phyllo dough until your baking dish is full.
  • Drizzle the melted butter over the phyllo dough using a pastry brush. Insert the bacon pieces into the dough layers. Pour the egg mixture over the dough. Season with pepper as desired and sprinkle with cheese.
  • Bake in the oven for 45 minutes, or until golden brown. Remove from the oven and serve immediately with chutney or chakalaka.
