Marry Me Chicken Bagel

This Marry Me Chicken Bagel is a perfect combination of juicy chicken strips in a creamy, flavorful coconut milk and sundried tomato sauce, served on a bagel. Easy to make and absolutely delicious, it’s an ideal meal for lunch or dinner that will have everyone asking for seconds!

Ingredients
  

For the sauce:

  • ¼ tin coconut milk
  • Salt
  • Pepper
  • 1 teaspoon sundried tomato with the oil
  • Grated Parmesan cheese for garnish
  • Rosemary chopped for garnish

For the chicken filling:

  • 1/2 onion finely chopped
  • 2 chicken breasts cut into strips
  • Salt
  • Pepper
  • 1 clove garlic minced

Extra:

  • 2 Sourdough bagels or regular bagels
  • N!ice Macadamia Oil

Instructions
 

  • Heat a drizzle of macadamia oil in a pan over medium heat
  • Add the chopped onion and minced garlic to the pan. Sauté until fragrant and golden brown.
  • Add the chicken strips to the pan. Season with salt and pepper. Cook until the chicken is browned and cooked through
  • Stir in the chopped rosemary, sundried tomato (including a bit of the oil for flavor), and coconut milk. Let the mixture simmer over medium heat until the sauce thickens slightly.
  • Spoon the chicken mixture generously onto the bottom half of each bagel.
  • Add the bagel top and serve immediately.
