
Marry Me Chicken Bagel
This Marry Me Chicken Bagel is a perfect combination of juicy chicken strips in a creamy, flavorful coconut milk and sundried tomato sauce, served on a bagel. Easy to make and absolutely delicious, it’s an ideal meal for lunch or dinner that will have everyone asking for seconds!
Ingredients
For the sauce:
- ¼ tin coconut milk
- Salt
- Pepper
- 1 teaspoon sundried tomato with the oil
- Grated Parmesan cheese for garnish
- Rosemary chopped for garnish
For the chicken filling:
- 1/2 onion finely chopped
- 2 chicken breasts cut into strips
- Salt
- Pepper
- 1 clove garlic minced
Extra:
- 2 Sourdough bagels or regular bagels
- N!ice Macadamia Oil
Instructions
- Heat a drizzle of macadamia oil in a pan over medium heat
- Add the chopped onion and minced garlic to the pan. Sauté until fragrant and golden brown.
- Add the chicken strips to the pan. Season with salt and pepper. Cook until the chicken is browned and cooked through
- Stir in the chopped rosemary, sundried tomato (including a bit of the oil for flavor), and coconut milk. Let the mixture simmer over medium heat until the sauce thickens slightly.
- Spoon the chicken mixture generously onto the bottom half of each bagel.
- Add the bagel top and serve immediately.
