Marry Me Chicken Bagel
This Marry Me Chicken Bagel is a perfect combination of juicy chicken strips in a creamy, flavorful coconut milk and sundried tomato sauce, served on a bagel. Easy to make and absolutely delicious, it’s an ideal meal for lunch or dinner that will have everyone asking for seconds!

For the sauce:
- ¼ tin coconut milk
- Salt
- Pepper
- 1 teaspoon sundried tomato with the oil
- Grated Parmesan cheese for garnish
- Rosemary chopped for garnish
For the chicken filling:
- 1/2 onion finely chopped
- 2 chicken breasts cut into strips
- Salt
- Pepper
- 1 clove garlic minced
Extra:
- 2 Sourdough bagels or regular bagels
- N!ice Macadamia Oil
Heat a drizzle of macadamia oil in a pan over medium heat
Add the chopped onion and minced garlic to the pan. Sauté until fragrant and golden brown.
Add the chicken strips to the pan. Season with salt and pepper. Cook until the chicken is browned and cooked through
Stir in the chopped rosemary, sundried tomato (including a bit of the oil for flavor), and coconut milk. Let the mixture simmer over medium heat until the sauce thickens slightly.
Spoon the chicken mixture generously onto the bottom half of each bagel.
Add the bagel top and serve immediately.
