Hertzoggie cookies

These delightful coconut thumbprint cookies are a perfect treat for any occasion

Ingredients
  

  • 2 cups desiccated coconut plus extra for rolling
  • 3 eggs
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 2 tablespoons butter room temperature
  • 2 cups flour
  • Pinch of salt
  • Cherry and strawberry jam (any red jam

Instructions
 

  • Preheat the oven to 180˚C.
  • Mix sugar and butter until creamy.
  • Separate eggs and beat the egg whites until stiff. Add the egg yolks to the butter mixture.
  • Mix in the beaten egg whites.
  • Fold in the flour, coconut, salt, and baking powder into the butter mixture.
  • Scoop tablespoon-sized portions and roll them into balls. Roll in extra coconut and place on your baking pan.
  • Press hearts with your thumb/finger.
  • Fill the spaces with jam and bake for 15 minutes at 180˚C.
  • If some of the jam cooked away fill up with more jam after taking them out of the oven
  • Let them cool and store in an airtight container
