Large batch spiced granola

This large-batch spiced granola is packed with warm spices, crunchy nuts, and a hint of sweetness from honey and macadamia nut butter. Finished with crushed Easter eggs (or your favorite chocolate), it's perfect for meal prep and can be enjoyed with yogurt or milk for a wholesome breakfast or snack.

Ingredients
  

  • 150 g cup Ni!ce.foods Macadamia nut butter
  • 150 g cup honey
  • 2 tsp vanilla extract
  • 5 tsp ground cinnamon
  • 2 tsp ground mixed spice
  • 1 tsp ground cardamom
  • 2 tsp ginger
  • ½ tsp black pepper
  • 1 ½ cups rolled oats
  • 1 cup nuts roughly chopped
  • 100 g unsweetened coconut flakes
  • 2-4 White easter eggs crushed *any chopped chocolate will also work
  • ½ cup mixed seeds or pumpkin
  • 2 tbsp coconut oil
  • 30 g Wazoogles Superfood Protein Blend - Chocolate Moondust

Instructions
 

  • Preheat oven to 160˚C and line a standard-size baking sheet with parchment paper.
  • In a medium mixing bowl, combine all the ingredients and mix well until evenly coated.
  • Transfer the mixture to the prepared baking sheet and spread into an even layer (use additional baking sheets as needed if increasing batch size).
  • Bake for 20-25 minutes, watching carefully toward the end as to not let it burn. You’ll know it’s done when the granola is fragrant and darkened in color. *See notes
  • Once the granola is visibly browned, remove from the oven and toss gently to let the heat escape.
  • Cool completely on the baking sheet.
  • Mix in the crushed easter eggs (or chocolate of choice)
  • Serve with yoghurt of choice or milk

Notes

If you don’t toss the granola while baking, it will stay extra chunky, but if you want a more crumbly granola, toss/stir a bit at the halfway point to break up the clumps.
