Lamington Swirl Bun
Inspired by the classic Lamington cake, these swirl buns are filled with chocolate and coconut, baked golden, and finished with a sweet cocoa icing. Perfect for Heritage Month or anytime you’re craving a nostalgic treat with a modern spin.
Dough:
- 1 bag store-bought bread dough about 500 g
Filling:
- 3 tbsp butter softened
- 2 tbsp cocoa powder
- 3 tbsp sugar
- ½ cup desiccated coconut
Topping:
- Chocolate spread
- Extra desiccated coconut for sprinkling
Preheat oven to 180°C and lightly grease a baking dish.
Roll out dough into a rectangle, about 1cm thick.
Mix butter, cocoa, and sugar into a paste. Spread evenly over the dough.
Sprinkle coconut over the filling.
Roll up tightly from the long edge and slice into 3–4 cm rounds.
Arrange in the dish, cut-side up, and bake 25–30 minutes until golden.
