Chai Spiced Banana Bread
Banana bread is a beloved classic, but have you ever tried it with the warm, aromatic flavors of chai spices and a splash of Amarula? This Chai Spiced Banana Bread takes the familiar comfort of banana bread and elevates it to a new level of deliciousness. Topped with plain yoghurt, chopped pecan nuts, lemon gel, chai honey gummies, and creme bruleed banana pieces, this bread is perfect for dessert or a satisfying snack.
For the loaf:
- ½ cup butter
- 1 cup sugar
- 2 eggs
- ¼ cup Amarula
- 1 ml baking soda
- 2 cups flour
- 2 tsp baking powder
- 2.5 ml salt
- 2 tbsp chai spice mix
- 4-6 bananas
For the topping (as per your preference):
- Plain yoghurt
- Lemon gel optional
- Chopped pecan nuts
- Creme bruleed bananas
- Chai honey gummies*
For the loaf:
Preheat your oven to 350°F (175°C) and grease a loaf tin.
In a large bowl, cream the butter and sugar together until light and fluffy.
In a separate bowl, sift and whisk the dry ingredients: baking soda, flour, baking powder, salt, and chai spice mix.
Blend the Amarula and eggs into the butter-sugar mixture until well combined.
Add the bananas to the mixture and blend until smooth.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Pour the batter into the prepared loaf tin and bake for about an hour, or until the top is golden and a skewer inserted into the center comes out clean.
For the topping:
Allow the banana bread to cool completely before adding the toppings.
Spread a generous amount of plain yoghurt on top of the cooled banana bread.
Decorate with lemon gel, chopped pecan nuts, chai honey gummies, and creme bruleed banana pieces.
Tips:
- Ensure your bananas are very ripe for the best flavor and texture.
- If you don't have Amarula, you can substitute it with a similar cream liqueur or milk.
