Gin and Tonic Ice Lollies

There’s nothing quite like a refreshing gin and tonic on a hot summer day – except maybe turning that classic drink into a delicious frozen treat! Introducing my Gin and Tonic Ice Lollies, infused with the vibrant flavors of Secco drink infusions. Not only are these lollies easy to make, but they also take your summer gatherings up a notch. Ingredients
  

  • 100 ml gin
  • 600 ml tonic water
  • 2 tbsp simple syrup or any syrup (optional for sweetness)
  • 3 Secco infusion sachet of choice I used Raspberry Rose Hibiscus, but you can experiment with others
  • Silicone ice lolly molds

Instructions
 

  • Add the Secco sachet to the gin and let it infuse for about 10 minutes. This will allow the flavors of the dried fruits and botanicals to fully release.
  • Once infused, combine the gin, tonic water, and simple syrup (if using) in a jug/bowl. Stir gently to mix all the flavors together.
  • Pour the gin and tonic mixture into the silicone molds, leaving a little room at the top to avoid spilling when freezing.
  • Place the molds in the freezer for at least 4-6 hours, or until fully frozen.
  • To easily remove the ice lollies from the molds, run them under warm water for a few seconds. Enjoy them poolside, at a BBQ, or as a fun twist at your next party!
