Traditional Melkkos

This traditional melkkos recipe is a South African classic — made from simple pantry ingredients and full of old-school comfort. Melkkos, or “milk food,” is a warm, creamy dish made by simmering milk with a soft flour-and-butter mixture, then topping it with cinnamon sugar.
Whether served for breakfast, dessert, or a winter snack, melkkos is a dish many South Africans associate with childhood, home, and love in a bowl. This version stays true to tradition — no shortcuts, no twists — just the real deal.

Ingredients

  • 100 g sugar
  • 1 ½ tsp ground cinnamon
  • 90 g cake flour
  • Salt a pinch
  • 3 tbsp butter
  • 1 L milk
  • 1 cinnamon stick
  • Vanilla essence Optional

Instructions

  • Mix the cinnamon and sugar. Set Aside
  • Rub together the flour, salt and butter with your fingers until it is nice and crumbly
  • Pour the milk into a large saucepan and add the cinnamon stick. Bring to the boil. Once the milk is boiling and frothy, reduce the heat and allow to simmer while slowly sprinkling the crumbs into the milk, whisking.
  • Reduce the heat and simmer gently, while whisking continually, for about 10 minutes. Turn off the heat, allow to rest for 5 minutes before serving with a generous sprinkling of cinnamon sugar.

Notes

Add more milk if you want a runnier melkkos
Add flavorings to the milk if you want a tastier melkkos
