
Spiced bunny cake
This warm, festive bake is a delicious fusion of spiced flavors and sweet chocolate—perfect for Easter.
Ingredients
- 2 cups sugar
- 4 eggs
- 125 ml oil
- 400 ml warm water
- 3 cups flour
- 4 teaspoons baking powder
- Salt
- 1 teaspoon cinnamon
- 1 teaspoon mixed spices
- ½ teaspoon ginger
- ½ cup chocolate chips
- 160 g Chocolate
- ¼ cup Speckled Eggs
- A dash of cream
- Butter Icing
Instructions
- Beat the sugar and eggs until creamy.
- Mix the flour, baking powder, and spices well together.
- Pour the water and oil together in a measuring cup.
- Add the dry ingredients and the water mixture alternately to the egg mixture and mix in between.
- Add the chocolate chips along with the last bit of flour.
- Divide the batter between your two prepared baking pans.
- Bake at 160˚C for ±40 minutes or until a knife comes out clean when you test the batter. *Baking at 160˚C will ensure that the top of the cake is even.
- Let the cake cool.
- While the cake cools, prepare the ganache.
- Melt your chocolate in the microwave in 30 second intervals. Mix after each interval. Do this until the chocolate is smooth and has no solid pieces in it. *It is important to mix after every 30 seconds, otherwise the chocolate will burn.
- Add a little cream, as well as the Speckled Eggs and mix well.
- Make a border on the first cake layer so that the ganache does not run out.
- Add the ganache and smooth it out.
- Place the next cake layer on top and decorate with the rest of the butter icing sugar.
- Decorate the cake with bunny ears or however you like.
- *The bunny ears are made with florist wire and thyme sprigs, rosemary can also be used.
