Red Velvet stuffed cookies

These delightful cookies combine a soft, cake-like cookie with a sweet and creamy marshmallow-cream cheese filling, creating a perfect balance of textures and flavors.

Ingredients
  

For the cookie:

  • 500 g cake premix *
  • 2 large eggs
  • ¼ cup oil

For the filling:

  • 125 g cream cheese
  • 1 cup marshmallows

Instructions
 

  • Microwave the marshmallows for 30 seconds – 1 minute
  • Mix with the cream cheese. Scoop out tablespoons of filling onto a tray and freeze for a bit.
  • Preheat your oven to 180°C
  • Mix all the cookie ingredients together.
  • Scoop out the desired amount of dough.
  • Cover a scoop of frozen filling with the dough.
  • Place on a baking tray
  • Put in the oven for 12 minutes or until brown.
  • Remove from oven to cool
  • Enjoy!
