
Red Velvet stuffed cookies
These delightful cookies combine a soft, cake-like cookie with a sweet and creamy marshmallow-cream cheese filling, creating a perfect balance of textures and flavors.
Ingredients
For the cookie:
- 500 g cake premix *
- 2 large eggs
- ¼ cup oil
For the filling:
- 125 g cream cheese
- 1 cup marshmallows
Instructions
- Microwave the marshmallows for 30 seconds – 1 minute
- Mix with the cream cheese. Scoop out tablespoons of filling onto a tray and freeze for a bit.
- Preheat your oven to 180°C
- Mix all the cookie ingredients together.
- Scoop out the desired amount of dough.
- Cover a scoop of frozen filling with the dough.
- Place on a baking tray
- Put in the oven for 12 minutes or until brown.
- Remove from oven to cool
- Enjoy!
