
Avocado croast
I recently saw this Avocado "croast" on Instagram (can't remember the page name) and decided to give it a try. The dish is called a "croast," which is essentially a pressed and toasted croissant topped with a delightful combination of guacamole, bacon (my additions), poached egg, and parmesan. Here's how you can recreate this delicious treat at home.
Ingredients
- 1 croissant
- 1 ripe avocado
- 2 slices of bacon
- 1 egg
- Shredded parmesan cheese
- Salt and pepper to taste
- Lemon or lime juice optional, for guacamole
- Mac-Sprinkles (niice foods)
Instructions
- Toast in a toaster or pan. Remember that the croissant should be pressed down
- Mash the avocado in a bowl.
- Add salt, pepper, mac-sprinkles and a squeeze of lemon or lime juice if desired. Mix well.
- Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels.
- Fill a small saucepan with water and bring it to a gentle simmer.
- Crack the egg into a small bowl and carefully slide it into the water.
- Cook for about 3-4 minutes until the white is set but the yolk is still runny.
- Remove the egg with a slotted spoon and drain on paper towels.
- Spread a generous layer of guacamole on each half of the toasted croissant.
- Place the crispy bacon slices on top of the guacamole.
- Gently place the poached egg on top of the bacon.
- Sprinkle with shredded parmesan cheese.
- Season with a little salt and pepper.
