Lamb Burgers with Rose Harissa Tzatziki

These juicy lamb burgers are layered with bold Middle Eastern spices and a creamy rose harissa tzatziki. Serve on brioche or flatbread with fresh greens, pickled onions, and optional pomegranate arils for a next-level burger experience.

Ingredients
  

For the patties:

  • 500 g lamb mince
  • 1 small red onion finely grated or minced
  • 1 garlic clove crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp cinnamon optional
  • Salt & black pepper
  • Chopped fresh parsley or mint
  • Optional: 1–2 tsp rose harissa inside the mix for an extra kick

Assembly Ideas

  • Bun: Soft brioche or flatbread folded like a pita

Toppings:

  • Baby spinach or rocket
  • Pickled red onions or shaved cucumber ribbons
  • Sliced tomatoes
  • Crumbled feta or thin slice of halloumi
  • Optional: pomegranate arils for a sweet crunch

Instructions
 

  • Mix all ingredients until just combined. Form into 4 patties.
  • Chill for 15–20 min to firm up.
  • Braai or pan-fry for 3–4 min per side until golden and just cooked through.
  • Base bun with spinach, lamb patty, a dollop of Rose Harissa Tzatziki, pickled onions and other toppings.
  • Cover with the other bun and enjoy with chips or other sides
